Total off road magazine put a string of lanes together in Cornwall a few years back, mostly running up the length of the North coast. Nothing too taxing but looked interesting.
failing that get some OS maps, the pink covered ones and look for the little string of red crosses or red dots, these are/were byways, then contact your local rights of way officer (ROW) at the council. quote the grid references of the ones you want to drive and they should be able to tel you if they are open.
OR hook up with the local green oval club as they will know where it's possible to drive off road.
Where are you in Cornwall, I'll have a look on memory map and see what it in your immediate area.
